What kind of wine is Valdobbiadene Prosecco Superiore Brut DOCG 'Ius Naturae' 2023 - Bortolomiol

The Valdobbiadene Prosecco Superiore Brut DOCG 'Ius Naturae' 2023 - Bortolomiol is an organic sparkling wine of great balance and authenticity, produced with the Charmat method (or Martinotti method), which maximizes the freshness and aroma of the Glera grape. It is born among the hills of Valdobbiadene, the heart of the Prosecco Superiore DOCG territory, where the altitude and breezy climate allow the grapes to ripen slowly, maintaining high natural acidity. This wine represents Bortolomiol's eco-sustainable philosophy, which cultivates its vineyards within the Parco della Filandetta following principles of organic viticulture, respecting the rhythms of nature and the biodiversity of the soil.

Vintage details

The 2023 harvest in Valdobbiadene was characterized by a balanced summer, with mild temperatures and well-distributed rainfall. These conditions favored a gradual ripening of the grapes, ensuring a moderate sugar level and excellent acidity. The result is a vintage with a fresh, clean, and particularly aromatic profile, with a fine structure and an elegant perlage.

Winemaking and aging

The Glera grapes are hand-picked and softly pressed to extract only the finest must. The first fermentation takes place in stainless steel tanks at controlled temperatures, to preserve the varietal aromas of the grape. Subsequently, the base wine is re-fermented in autoclaves with selected yeasts, according to the Charmat method, to develop the typical effervescence of Prosecco Superiore. The secondary fermentation process lasts approximately 30-40 days, followed by a short aging period of about three months before bottling, to harmonize aromas and taste.
