It is produced using the Charmat method (also known as the Martinotti method), a process that involves a second fermentation in autoclaves, ideal for preserving the freshness and typical aromas of the grape variety. This wine represents a true synthesis of the Andreola philosophy: a skilful combination of five different company interpretations of Prosecco (Millesimato, 26esimo I°, Dirupo Brut, Dirupo Extra Dry, and Más de Fer) which, united, give life to a balanced and seductive profile, capable of expressing the different souls of the Valdobbiadene terroir.Vintage Details
Each vintage of Valdobbiadene Prosecco Superiore DOCG Dry "Sesto Senso" - Andreola reflects the climatic characteristics of the Treviso hills. Generally, the harvest takes place in early September, under conditions of good temperature fluctuations between day and night: a factor that contributes to enhancing the fruity aromas and the finesse of the perlage. Balanced vintages with regular ripening produce particularly fragrant and lively wines.Vinification and Aging
Vinification begins with the soft pressing of the grapes to obtain only the free-run must, the purest and most aromatic part. This is followed by a first fermentation at controlled temperature and, subsequently, the second fermentation in an autoclave according to the Charmat method, which lasts several weeks. Aging then takes place in steel, in contact with the yeasts, to enrich the wine with softness and complexity.
