This sparkling wine is produced with the Charmat method (or Martinotti), which involves a second fermentation in steel autoclaves at controlled temperatures, thus preserving the natural freshness and varietal aromas of the Glera grape. The vintage is characterized by a manual harvest carried out between the second half of September and the beginning of October. Winemaking begins with a soft pressing of the grapes, followed by the fermentation of the must at controlled temperatures. After the first fermentation, the secondary fermentation takes place in an autoclave according to the long Charmat method, with a period of aging on the lees of about 90 days. This process allows for a fine and persistent perlage, as well as developing complex aromas and a creamy structure.
