Vintage details

The production vintage of Farfalla Rosé Magnum is generally the result of careful and selective hand-harvesting to preserve the integrity of the grapes. The grapes are picked in the early morning hours to maintain the right temperature and preserve natural aromas and acidity. The typical climatic conditions of Oltrepò Pavese, with significant temperature variations between day and night, favor the slow maturation of Pinot Noir, enhancing its aromatic elegance.

Vinification and aging

The Farfalla Rosé is produced using the Metodo Classico, the same method used for Champagne: secondary fermentation occurs directly in the bottle. After a gentle pressing, only 50% of the free-run must – the most valuable part of the juice – is destined for alcoholic fermentation. The final cuvée is created by blending wines from the current vintage with at least 20% reserve wines, to ensure consistency and complexity. This is followed by secondary fermentation in the bottle and a long aging on the lees for at least 30 months, which gives the wine creaminess, aromatic richness, and a fine, persistent perlage.
