Winemaking and aging

At Tenuta Il Poggione, grape harvesting is strictly manual, with clusters selected directly in the vineyard. Vinification takes place in temperature-controlled stainless steel tanks, where the must ferments slowly to best express the varietal aromas of Sangiovese. This is followed by a long maceration on the skins – a phase in which the wine remains in contact with the solid parts to extract color and tannins – and an aging of approximately 36 months in large French oak barrels. The very long rest in wood softens the tannic texture and adds complexity to the bouquet.
