The 2019 vintage was characterized by regular climatic conditions, with a summer that was not excessively hot and excellent temperature fluctuations between day and night. These conditions favored a slow and complete maturation of the grapes, preserving varietal aromas and good natural acidity. The harvest was carried out by hand, selectively, to ensure only grapes in perfect health and ripeness.Vinification and Aging
After harvesting, the grapes are destemmed and undergo spontaneous fermentation with indigenous yeasts, a process that allows the wine to fully express the character of its terroir. Maceration on the skins lasts about three weeks, to extract color, aromas, and soft tannins. This is followed by aging in small oak barrels for about 18 months, during which the wine slowly matures, developing complexity and harmony.
