The 2023 vintage was characterized by a regular climate, with a mild spring and a balanced summer that favored homogeneous ripening of the grapes. After a manual harvest of Glera grapes, the must is obtained through soft pressing to preserve aromas and fragrance. Secondary fermentation (presa di spuma) takes place according to the Charmat or Martinotti method, with re-fermentation in an autoclave for at least 60 days.
