What wine is Valdobbiadene Prosecco Extra Brut Metodo Classico DOCG 2021 - Bortolotti
The Valdobbiadene Prosecco Extra Brut Metodo Classico DOCG 2021 - Bortolotti is a unique and surprising version of traditional Prosecco, produced entirely in the heart of Valdobbiadene, one of the most suitable areas for Glera cultivation. Unlike common Proseccos made using the Charmat method, this label is created using the Metodo Classico – the same method used for Champagne and Franciacorta – which involves a second fermentation directly in the bottle. The result is a sparkling wine of great finesse, dry, taut, and mineral, capable of combining the elegance of the territory with the typical complexity of wines aged on lees.Vintage Details
The 2021 vintage in Valdobbiadene was characterized by a balanced climate, with dry springs and a regular summer that favored perfect ripening of the Glera grapes. The temperature excursions between day and night enhanced the aromatic profile of the grape, lending freshness and a pleasant olfactory complexity. The harvest, carried out manually, allowed for the selection of only the best bunches.Winemaking and Aging
After primary fermentation in steel at controlled temperature, the base wine is bottled for the second fermentation according to the Metodo Classico. Aging takes place on the lees for at least 15 months, during which time the wine acquires structure, elegance, and aromatic finesse. Disgorgement (i.e., the removal of spent yeasts) occurs without sugar dosage, creating a pure and authentic Extra Brut that best expresses the voice of the territory.Tasting Notes
A Prosecco that surprises at first glance and captivates with its personality. Below are the main sensations that emerge during tasting.Color
Bright and clear, with a straw-yellow color and delicate golden reflections. The perlage is fine and continuous, a sign of long maturation on the lees.Nose
The bouquet is refined and complex: notes of green apple, citrus, and white flowers are recognized, accompanied by delicate hints of bread crust and almond due to aging on the lees. The aroma is fresh, elegant, and never overpowering.Taste
On the palate, it is dry, direct, and harmonious. The bubbles are creamy and fine, the citrus freshness perfectly balances the mineral savoriness. The acidity is lively but balanced, leaving the mouth clean and inviting, with a pleasant fruity return in the finish.Food Pairings for Valdobbiadene Prosecco Extra Brut Metodo Classico DOCG 2021 - Bortolotti
