The Pinot Noir grapes are harvested by hand, placed in crates, and immediately selected one by one. Vinification takes place delicately: the grapes are destemmed without crushing and ferment in open top barrels at a controlled temperature (around 24°C). Maceration lasts about twelve days, during which light manual punch-downs are performed to naturally extract color and aroma.
