After a first fermentation in steel to enhance freshness and primary aromas, the base wine is bottled with the addition of yeasts and sugars for the second fermentation in the bottle. Aging on the lees lasts at least 24 months: during this period, the wine develops its creamy structure and typical notes of toasted bread and hazelnut.
