The 2023 vintage in Alto Adige was characterized by a mild winter and a regular summer, with significant temperature fluctuations between day and night. These conditions favored a slow and complete ripening of the Sauvignon Blanc grapes, ensuring intense aromas and a pleasant natural acidity. The bunches were harvested at full maturity to best preserve the aromatic components and the typical freshness of the grape variety.Vinification and aging
After the harvest, the grapes are gently pressed and the must is fermented at controlled temperatures in stainless steel tanks, to enhance the fruity and floral notes of the Sauvignon Blanc. The wine then ages for several months on its lees, a process called “sur lie,” which contributes to enriching the structure and softness of the palate.
