The grapes are harvested exclusively by hand to preserve their integrity. After gentle pressing, the base wine ferments at a controlled temperature. This is followed by secondary fermentation according to the Classic Method, which is a second fermentation in the bottle, where the wine remains in contact with the yeasts for at least 36 months. This long aging on the lees enriches the aromatic profile and imparts the typical creamy texture.
