The 2020 harvest was particularly balanced, with a favorable climate that allowed for slow and regular ripening of the grapes. A portion of the bunches, about 20%, underwent a light appassimento (drying process): a practice that concentrates aromas and sugars, giving greater roundness and intensity to the final wine.Vinification and aging
After harvesting, the grapes are macerated and fermented for about 25 days, during which time aromas, color, and tannic structure are extracted. Aging continues for 18 months in oak barrels of different capacities: a choice that allows the Neblo to develop a perfect balance between the richness of the fruit and the delicate spicy notes of the wood.Tasting notes
