The grapes are destemmed and subjected to controlled-temperature fermentation to preserve the varietal aromas of Nebbiolo. This is followed by a maceration of about 8 days on the skins, a phase during which the must gains color, aromas, and tannins. After fermentation, the wine ages in wood for several months, during which it develops softness, roundness, and complex taste and aroma.
