The harvest, carried out manually between late September and early October, allowed for the selection of only the healthiest and ripest bunches, which were then destined for natural raisining, a distinctive element of Sfursat.

Vinification and aging

After harvesting, the grapes are left to air-dry for about three months in ventilated rooms, until February. This concentrated process of sugars and aromas increases the wine's structure and intensity, naturally reducing the yield. Fermentation takes place slowly at controlled temperatures, followed by a long maceration on the skins to extract color, tannins, and aromas. Aging continues for over a year in oak barrels, which add complexity and spicy notes, before bottling and a further period of rest in glass.
