What kind of wine is Valle d'Aosta Fumin DOP 2022 - Elio Ottin?

The Valle d'Aosta Fumin DOP 2022 - Elio Ottin is a mountain red wine that perfectly embodies the authentic soul of the Aosta Valley. Produced by Elio Ottin, a leading name in Aosta Valley viticulture, it is made from 100% Fumin grapes, an indigenous varietal with a strong character and territorial identity. The vineyards are located in the municipality of Quart, at an altitude of approximately 600 meters, where significant temperature variations between day and night enhance aromatic complexity and freshness. The result is a wine of good structure, elegant and enveloping, capable of combining intensity and finesse in perfect balance.

Vintage Details

The 2022 vintage in the Aosta Valley was characterized by a hot and dry summer, but with cool nights that favored a slow and regular maturation of the grapes. The Fumin harvest took place between late September and early October, when the clusters reached full phenolic maturity, meaning the balance between sugars, acidity, and tannic components. This allowed for a more harmonious wine rich in aromas.

Winemaking and Aging

After a meticulous selection of the grapes, fermentation takes place in steel at controlled temperatures, with maceration lasting approximately 10-12 days on the skins to extract color and aromas without compromising the finesse of the tannins. This is followed by an 8-month aging period in steel, supplemented by a period in first-pass wooden barrels. This double process helps maintain the wine's fruity freshness while enriching it with subtle spicy nuances and a softer texture.

Tasting Notes

Color

In the glass, the Valle d'Aosta Fumin DOP 2022 - Elio Ottin displays an intense ruby red color with violet reflections, typical of the varietal. Its clarity and chromatic density anticipate a full-bodied and well-structured wine.

Nose

On the nose, it reveals aromas of small ripe red fruits – such as currants and blackberries – accompanied by notes of undergrowth, sweet spices, and light smoky nuances. The olfactory intensity increases with oxygenation, bringing forth hints of black pepper and liquorice.

Palate

On the palate, it is full and harmonious. The tannins are well-present yet enveloping, a sign of careful and respectful winemaking. The structure is balanced by good acidity, which gives impetus to the sip and a long aromatic persistence. The finish closes on fruity and spicy notes, delivering an overall impression of elegance and personality.

Food Pairings for Valle d'Aosta Fumin DOP 2022 - Elio Ottin

This wine pairs perfectly with dishes that have an intense and rich flavor. Ideal with:
  • typical Aosta Valley dishes such as carbonada (beef stew in red wine) and fondue;
  • fine grilled meats or braised dishes;
  • aged mountain cheeses, such as Fontina DOP or Toma d'alpeggio.
Thanks to its lively freshness and soft tannins, it also harmoniously accompanies more modern dishes such as mushroom risottos or ragù lasagnas.

Storage and Aging: How to store Valle d'Aosta Fumin DOP 2022 - Elio Ottin

The Valle d'Aosta Fumin DOP 2022 - Elio Ottin can be enjoyed young to appreciate its freshness and fruitiness, but it also has excellent aging potential. If stored correctly, it can evolve for up to 6-8 years, developing more complex aromas and tertiary notes (such as vanilla and toast). For optimal storage:
  • keep bottles horizontally, away from direct light;
  • maintain a constant temperature between 12°C and 15°C and humidity around 70%;
  • avoid temperature fluctuations and vibrations.
Served at a temperature of approximately 18°C, it best expresses all its aromatic nuances and the perfect balance between strength and finesse, typical of great mountain reds.
