After gentle pressing of the grapes, the must undergoes fermentation at controlled temperatures to preserve the primary aromas of the grape. The subsequent secondary fermentation (prise de mousse) takes place in an autoclave, according to the Charmat method, with a refermentation period of about 60 days. This process gives the wine a fine and persistent perlage.
