After harvesting, the grapes are gently pressed, and the must ferments in stainless steel tanks at controlled temperatures to preserve aromatic purity. The second fermentation – or "presa di spuma" – takes place in an autoclave for about 40 days, according to the Charmat method. Aging continues for several weeks in contact with the yeasts, enriching the wine with complexity and softness.
