What kind of wine is Valdobbiadene Prosecco Superiore di Cartizze Dry DOCG 'Cuvée Viviana' - Valdo?

The Valdobbiadene Prosecco Superiore di Cartizze Dry DOCG 'Cuvée Viviana' - Valdo is an elegant and fragrant sparkling wine, produced from the most prized hills of Cartizze, in the heart of the Valdobbiadene region, in Veneto. This area, considered the “Grand Cru” of Prosecco, is characterized by steep and sunny terrain that ensures grapes with great aromatic concentration. The wine is made using the long Charmat Method, which involves secondary fermentation in autoclaves to best enhance the varietal aromas and give a fine and persistent mousse: a Dry style, therefore slightly off-dry, perfect for those seeking a balance between sweetness and freshness.

Vintage details

Harvesting generally takes place by hand, between late September and early October, when the Glera grapes reach perfect sugar and aromatic ripeness. Cartizze's microclimate, with good temperature swings between day and night, allows the grapes to maintain beautiful natural acidity and intense aromas of ripe fruit and white flowers.

Winemaking and aging

Winemaking strictly follows the long Charmat Method: after the first fermentation in steel tanks, the base wine is placed in temperature-controlled autoclaves for five months of secondary fermentation on the lees. This prolonged contact period enhances aromatic complexity and ensures fine, creamy bubbles. This is followed by about three months of aging in the bottle before release, for a perfect balance between freshness and softness.
