Terre Siciliane Metodo Classico Brut Blanc de Blancs IGT 'Gaudensius' - Firriato is a Sicilian sparkling wine of great elegance, produced using the Metodo Classico — the same method used for Champagne — which involves a second fermentation in the bottle. It is born from the union of two white grape varieties: Carricante, an indigenous variety from the slopes of Etna, and Chardonnay grown in the vineyards of Borgo Guarini, in the Trapanese hinterland.

It is a Blanc de Blancs, meaning a sparkling wine made exclusively from white grapes, capable of enhancing the freshness and minerality typical of volcanic soils, combined with the aromatic finesse of Chardonnay. The combination gives rise to a wine of distinct personality, with a modern and refined taste.

Vintage details

The climatic trend of the vintage was balanced, with a windy spring and a dry summer that favored the perfect ripening of the grapes. The harvest, carried out manually between late August and early September, allowed for the collection of healthy grapes, rich in aromas and acidity, fundamental elements for the production of a Metodo Classico of character.

Winemaking and aging

After a gentle pressing, the musts are fermented separately in steel at controlled temperatures, to preserve the aromatic freshness of the grape varieties. This is followed by blending and re-fermentation in the bottle according to the Metodo Classico. Aging on the lees lasts on average over 24 months, a period that gives the sparkling wine complexity and a refined creaminess on the palate. After disgorgement (the removal of the lees), the wine rests for a few more months before being released to the market, to achieve perfect gustatory harmony.

'Gaudensius' stands out for its expressive purity and the balance between freshness, acidity, and mineral notes, which make it a Metodo Classico of great finesse.

Color

In the glass, it presents a brilliant straw yellow with golden reflections and a fine and persistent perlage, a sign of a long stay on the lees.

Nose

The nose is elegant and complex: notes of fresh citrus, green apple, and white flowers emerge, accompanied by delicate hints of bread crust and toasted almond, typical of bottle re-fermentation.

Palate

The sip is vibrant and fresh, with a decisive acidity and a pleasant volcanic savoriness. The finish is dry, harmonious, with a mineral and slightly citrusy aftertaste that invites another taste.
