Winemaking and aging

After a first fermentation of the must, the base wine rests until the "prise de mousse," when the second fermentation takes place inside the bottle. The subsequent aging on lees lasts at least 36 months: it is here that the wine develops complexity, creaminess, and a fine, persistent perlage. After disgorgement (the removal of yeast residues), a minimal dosage of sugars is added to maintain its natural elegance and Brut profile.
