The production of Spumante Metodo Classico Brut 'Riserva Nobile' 2020 - d'Araprì faithfully follows the traditional method of in-bottle re-fermentation. After a first fermentation of the must, the base wine rests until the "prise de mousse," when the second fermentation takes place inside the bottle. The subsequent aging on lees lasts at least 36 months: it is here that the wine develops complexity, creaminess, and a fine, persistent perlage.
