The 2021 vintage on Etna was characterized by regular temperatures and excellent diurnal temperature variation, ideal conditions for preserving the natural acidity of the grapes and concentrating their aromas. The harvest was done manually between late August and early September, with careful selection of the healthiest and ripest bunches.Winemaking and aging
After gentle pressing of the grapes, the must is fermented at controlled temperatures to preserve the most delicate aromas. This is followed by secondary fermentation in the bottle, typical of the Metodo Classico, with aging on the lees for at least 24 months. During this period, the wine slowly evolves, acquiring complexity and creaminess. Before release, disgorgement is performed to remove the yeast residue, followed by a brief resting period to harmonize the aromas.Tasting notes
