The cuvée is mainly composed of Pinot Noir, with a small portion of Chardonnay: the latter is vinified in steel and partly in wood to impart greater structure and complexity. After fermentation, the base wine rests on its lees in the bottle for at least 30 months, a phase in which it develops the delicate aromas of bread crust and toasted notes typical of the Traditional Method.
