Vinification and aging

The grapes, from vines over forty years old, are manually selected and carefully processed. After destemming and crushing – that is, the separation of the berries from the stems and their gentle pressing – the must remains in contact with the skins for 8-12 hours in a phase called skin maceration, useful for extracting aromas and structure. This is followed by a cold decantation of 12-24 hours, after which fermentation begins in old barriques, where batonnage (stirring of the fine lees) is performed every four weeks for six months. The final aging, for another six months, takes place in steel to preserve freshness and aromatic precision.
