It originates from the most suitable vineyards in Valtellina, a unique mountain area known for its exposure and terroir, where the grapes ripen on terraces supported by dry stone walls. This red wine is produced only in the best vintages and comes from an ancient process: after harvesting, the grapes are left to dry in ventilated rooms called "fruttai". This is where the term "Sfursat" comes from, meaning "forced," indicating the effort required from the grape cluster to concentrate aromas and structure. The 2021 vintage is remembered for its balanced climatic conditions, with a warm but not scorching summer and a dry autumn that favored perfect grape ripening. The harvested grapes showed excellent sugar concentration, a fundamental element for the drying process. After harvesting, the grapes are left to dry for about three months in the "fruttaio" Ca’ Rizzieri, located at an altitude of about 500 meters and particularly well-ventilated. During this period, the water in the grapes naturally evaporates, concentrating sugars and aromatic substances. Fermentation occurs slowly, followed by a prolonged maceration in contact with the skins to extract color and structure. Aging then continues in fine wooden barrels for about two years, before further rest in the bottle which gives the wine full complexity and softness.Tasting Notes
