After harvesting, the Nebbiolo grapes undergo controlled fermentation to preserve the purity of the fruit. This is followed by several weeks of maceration on the skins, which allows for delicate extraction of color and aromas. Aging takes place in new, lightly toasted oak barriques for approximately twelve months, followed by a period in chestnut barrels that gives the wine complexity and softness.
