It is made from Corvina Veronese (95%) and Rondinella (5%) grapes from approximately twenty-year-old vines grown on the Tenuta Novare estate, in the heart of Valpolicella Classica. The Ognisanti vineyard, from which it takes its name, is located in an ideal hillside position, capable of giving the grapes freshness, aromatic complexity, and tannic finesse. The result is a medium-bodied wine with a harmonious structure and a profoundly balanced taste, capable of authentically narrating its origin.

Vintage details

The 2021 vintage was characterized by a balanced climate, with favorable temperature excursions and well-distributed rainfall. The manual and meticulous harvest allowed for perfectly ripe bunches to be picked, preserving the aromatic component of the Corvina and the typical fragrance of the Rondinella. This combination resulted in a particularly fresh and dynamic Valpolicella Superiore, with clear fruity notes and a rounded structure.

Vinification and aging

The vinification of the Valpolicella Classico Superiore DOC “Ognisanti di Novare” 2021 - Bertani fully respects local tradition. The grapes are destemmed and fermented at controlled temperatures for about ten days, with gentle pump-overs to extract color and aromas without excessive tannicity. This is followed by a slow maceration (a brief period during which the wine remains in contact with the skins to enrich itself in color and structure) and then a one-year aging in 50-hectoliter French oak barrels. A further rest of at least six months in the bottle completes the work, giving balance and softness to the sip.
