It is a full-bodied and intense red wine, made primarily from Corvina Veronese and Rondinella grapes, selected and air-dried according to tradition. The 2021 harvest was characterized by a balanced climate, with warm but not extreme summers and a dry autumn, perfect for drying the grapes. The ideal conditions allowed for healthy grapes rich in sugars and aromatic substances, giving the wine remarkable complexity and well-balanced freshness.Winemaking and Aging
After harvesting, the grapes are left to air-dry for about 100 days in ventilated drying rooms, concentrating aromas and sugars. Fermentation occurs slowly, at a low temperature, to preserve the fruity and spicy notes. This is followed by a long maceration on the skins, responsible for the intense color and velvety structure.
