The harvest is carried out strictly by hand, at the peak of maturity of the Chardonnay and Pinot Bianco grapes. The vintage was characterized by an ideal balance between warmth and moderate rainfall, factors that favored healthy grapes with excellent natural acidity, essential for giving impetus and freshness to this sparkling wine.Winemaking and aging
After soft pressing, the must ferments in steel at controlled temperature to preserve the most delicate aromas. Refermentation takes place in the bottle according to the classic method, with a long stay on the lees of at least 36 months. This slow aging allows the wine to evolve gently, acquiring complexity and a fine and persistent mousse.
