The typical climatic conditions of the area – with good temperature fluctuations between day and night – favor the slow and complete ripening of the grapes, giving the final blend intense aromas and great balance.Vinification and aging
Production strictly follows the Classic Method: after soft pressing of the grapes, the base wine ferments in steel tanks to maintain varietal fragrance. This is followed by refermentation in the bottle, where the wine remains in contact with its lees for about 36 months. This long aging period imparts complexity, creaminess, and a richer aromatic spectrum, balancing the freshness and making the bubbles fine and persistent.
