Winemaking and Aging

After harvesting, the grapes are gently destemmed and crushed. Fermentation takes place in stainless steel tanks at a controlled temperature to preserve the purity of the fruit. Aging continues for approximately 6 months in large 75-hectoliter oak barrels, where the wine acquires softness and structure, and then concludes with a further rest in the bottle for about 4 months before commercial release.
