Produced from a selection of grapes from multiple vineyards and two different vintages, 'Quindici 16' comes from hand-picked harvests in September, when the temperature excursions between day and night favor aromatic maturation and the preservation of natural acidity. The climatic conditions of these harvests contributed to a balanced profile, where the fruity component blends with a marked freshness.

Winemaking and aging

The Charmat method used for the secondary fermentation takes place in an autoclave at controlled temperature for about 60 days, ensuring a fine and persistent mousse. After fermentation, the wine rests for a short period on its lees to refine the aromatic notes and give greater roundness to the taste. No sugar is added after secondary fermentation, thus yielding a pure, dry, and elegant version of Prosecco Superiore.
