The winemaking process for Barolo DOCG del Comune di Serralunga D'Alba 'Renaissance' 2021 - Fontanafredda begins with a gentle crushing of the grapes and fermentation in steel tanks, at a controlled temperature of around 30°C, to preserve the varietal aromas. This is followed by a long maceration (contact between the must and the grape skins), which allows for the extraction of color and structure. Aging takes place both in small Allier French oak barriques, which impart elegance and roundness, and in large oak barrels of 2,000-3,000 liters, ideal for slow and balanced maturation.
