Vinification and aging

Both wines are vinified with controlled temperature fermentation, followed by a maceration of about eight days in contact with the skins, necessary to extract color and tannins in a balanced way.

Regarding aging:

  • Barolo “La Tradizione”: ages partly in Slavonian oak barrels and partly in small French barriques, then completes with a period of rest in the bottle.
  • Barbaresco “La Tradizione”: matures for about two years in wood, achieving perfect harmony between structure and softness.
