Winemaking and Aging

Maceration takes place with a submerged cap – a technique that involves prolonged contact of the must with the skins – for a period ranging from 70 to 90 days, extracting color, aromas, and tannins in the most natural way. The subsequent aging lasts about five years in neutral oak barrels, which allow the wine to evolve slowly, maintaining the primary aromas of Nebbiolo intact. Production is limited, with less than 1,000 bottles per vintage.
