The vinification of Barbaresco DOCG 'Basarin' 2020 - Sottimano reflects the winery's artisanal philosophy. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, without the addition of selected yeasts, but using only those naturally present on the skins. This is followed by a long maceration, which allows for optimal extraction of color and aromas. After malolactic fermentation – a process that naturally softens the acidity – the wine ages in small French oak barrels for approximately 20 months, remaining in contact with its fine lees (sur lie) to enrich its complexity.
