The fermentation of Pinot Noir grapes takes place in stainless steel, at a controlled temperature, to preserve aromas and freshness. This is followed by a short maceration on the skins, necessary to extract color and light tannic notes without weighing down the structure. Aging lasts for about eight months, divided between stainless steel tanks and large wooden barrels: a choice that combines the purity of the fruit with a subtle complexity given by contact with the wood.
