The harvest generally takes place in the second half of August, an ideal time to preserve the natural acidity of the grapes and obtain a balanced sparkling wine base. The Pinot Noir grapes are hand-picked, in small crates, to ensure the utmost integrity of the berries. The cool and breezy climatic conditions, typical of Alta Langa, favor slow maturation and extraordinary aromatic concentration.Winemaking and aging
The production of Alta Langa Brut DOCG 'Hundred Sixty Six' - Fontanafredda strictly follows the Metodo Classico, the same method used for Champagne. After gentle pressing and fermentation of the must in stainless steel, the base wine is bottled with selected yeasts for secondary fermentation.
