The temperature swings between day and night favored the accumulation of aromas and the preservation of the grapes' natural acidity. The Venezia Giulia Ribolla Gialla IGP 2024 - I Clivi is made exclusively from free-run must, which is the first and most delicate fraction of must obtained from pressing the grapes. Fermentation occurs spontaneously in stainless steel tanks, without the addition of selected yeasts, to preserve the authentic aromas of the grape variety. After fermentation, the wine remains in contact with its fine lees – the spent yeasts – for a period of 6-8 months: this practice, called "sur lies aging," gives the wine complexity and a silkier texture.
