Winemaking and Aging

The Blanc de Noirs Dosaggio Zero 2019 - Divella is produced using the Metodo Classico, which involves refermentation in the bottle and a long period of aging on the lees. After gentle pressing of whole grapes, the must ferments spontaneously with indigenous yeasts. This is followed by over 30 months of aging on the lees, which gives the wine complexity, aromas of brioche, and fine, persistent bubbles. Being a Dosaggio Zero, no sugar is added during the final disgorgement phase: this allows the freshness and purity of the fruit to remain intact, with an extremely dry and mineral profile.
