The 2023 vintage in Pantelleria was characterized by a warm but breezy climate, with temperature fluctuations that favored the aromatic concentration of the grapes. The harvest, carried out by hand between late August and early September, allowed only the healthiest and ripest bunches to be selected. The result is a balanced passito, with an enveloping sweetness and a marine freshness typical of this volcanic island.Winemaking and Aging
After the harvest, a portion of the grapes is left to dry slowly in the sun on traditional “cannizzi”, reed mats that allow the berries to dehydrate, concentrating sugars and aromas. The must from fresh grapes is then combined with that from dried grapes, creating a wine of great complexity. The Passito di Pantelleria DOC 'Giardino Pantesco' is not a fortified wine: its sweetness is natural, a result of the residual sugar in the grapes.
