After harvesting, the grapes are destemmed and fermented separately in stainless steel tanks at controlled temperatures. The maceration — the contact of the must with the skins — lasts for about 20 days, a sufficient time to extract color and structure. After malolactic fermentation, the wine is transferred to French oak barriques where it ages for about 14 months, and then rests for a few months in the bottle.
