The grapes for the Cuvée Perpétuelle mainly come from the vineyards of Chamery, Rilly-la-Montagne, and Écueil, cultivated by Bonnet-Ponson with great attention to the natural balance of the soil. The vintages used are the result of careful harvesting, marked by a temperate climate that favored uniform ripening. The reserve wines, stored year after year according to the "perpetual cuvée" principle, provide remarkable aromatic complexity and a rare depth of flavor for an Extra-Brut Rosé.Winemaking and aging
The winemaking strictly follows the méthode champenoise, with fermentation in the bottle and a long aging on the lees for at least four years.
