The harvest, carried out by hand between the end of September and the beginning of October, resulted in a wine with a clean and vibrant aromatic profile, with fine tannins and good mineral freshness.Winemaking and Aging
The grapes for Etna Rosso DOC 'Vulkà' 2022 - Nicosia are destemmed and fermented for about 10 days at a temperature between 22 and 24°C. Maceration on the skins, necessary to extract color and aromas, is carried out gently to preserve the elegance of the fruit. Aging takes place partly in stainless steel, to maintain freshness, and partly in oak tonneaux, which add aromatic complexity.
