The grapes ripened slowly, benefiting from significant temperature variations between day and night. After careful vinification, which involves controlled-temperature fermentation to preserve varietal aromas, the must remains in contact with the skins for several days, in order to gently and gradually extract color and structure (a phase called maceration).
