The 2018 vintage on Etna was characterized by regular climatic conditions, with mild summers and good diurnal temperature variations. These conditions allowed for a slow and harmonious ripening process of the grapes, preserving their natural acidity and aromatic complexity. The harvest, carried out manually between late September and early October, ensured the selection of the best bunches, resulting in a balanced wine rich in personality.Winemaking and Aging
After temperature-controlled fermentation, which allows the varietal aromas to remain intact, the must stays in contact with the skins to facilitate the extraction of color and tannin.
