After selection in the vineyard, the bunches are destemmed and subjected to a short cold maceration to gently extract color and aromas. Fermentation occurs spontaneously, thanks to the natural yeasts present on the skins, at a controlled temperature to preserve the fruit aromas. This is followed by approximately 6 months of aging in steel, which maintains the freshness of the Dolcetto, and a further 6 months of rest in the bottle before release.
