The Glera bunches were hand-picked at the perfect stage of ripeness, ensuring an excellent balance between sugars, acidity, and varietal aromas.Vinification and Aging
After a soft pressing, alcoholic fermentation takes place in stainless steel tanks at controlled temperatures, preserving the fruit's fragrance. The subsequent prise de mousse (the second fermentation that creates the bubbles) lasts about 30-40 days in an autoclave.
