The 2021 vintage was characterized by a balanced climate, with a good diurnal temperature range during grape ripening. This fostered the full aromatic expression of Sangiovese and the formation of fine, well-integrated tannins. The harvest, meticulously carried out by hand, allowed for the selection of only the healthiest and ripest bunches, ensuring excellent quality and remarkable flavor concentration.Winemaking and aging
After harvesting, the grapes are destemmed and softly pressed to best preserve their varietal characteristics. Fermentation takes place in temperature-controlled stainless steel tanks with indigenous yeasts, meaning those naturally present on the grape skins, thus maintaining the identity of the Volpaia territory. Maceration on the skins lasts for the necessary time to extract color, aromas, and the right amount of tannins. Subsequently, the wine ages for approximately 24 months: partly in Slavonian oak barrels (capacity between 15 and 35 hl) and partly in French oak barriques, to add complexity and tannic sweetness.Tasting notes
