Winemaking and aging

Fermentation takes place in temperature-controlled stainless steel tanks with indigenous yeasts, meaning those naturally present on the grape skins, thus maintaining the identity of the Volpaia territory. Maceration on the skins lasts for the necessary time to extract color, aromas, and the right amount of tannins. Subsequently, the wine ages for approximately 24 months: partly in Slavonian oak barrels (capacity between 15 and 35 hl) and partly in French oak barriques, to add complexity and tannic sweetness.
