What kind of wine is Champagne Rosé Assemblage Brut - Bonnaire

The Champagne Rosé Assemblage Brut - Bonnaire is a refined expression of the Champenoise tradition from the historic Bonnaire house, located in the heart of Cramant, in the renowned Côte des Blancs. This assemblage rosé is born from the balanced union of Chardonnay and Pinot Noir, grape varieties symbolizing elegance and structure, which find a perfect harmony here thanks to the finesse of the Bonnaire style.

Produced with the classic Champenoise method (also known as the traditional method), the same one used for the sparkling process of the finest Champagnes, this wine undergoes its second fermentation in the bottle and ages for a long time on its lees, developing complex aromas and an exceptionally fine mousse.

Vintage Details

Each new edition of Champagne Rosé Assemblage Brut - Bonnaire faithfully reflects the climatic conditions of the harvest year. The balanced temperatures and the manual harvesting of the grapes, carried out at the ideal moment of ripeness, ensure a perfect balance between freshness and fullness. The quality of the grapes is the starting point for this cuvée, designed to enhance the purity of the fruit and the aromatic precision typical of the house.

Vinification and aging

Vinification strictly follows the classic method, with secondary fermentation in the bottle and a long aging period on the lees of approximately 36 months. This maturation time allows the wine to develop a creamy and complex texture, while maintaining freshness and liveliness. The Brut dosage (i.e., the minimal addition of sugar at disgorgement) perfectly balances the natural acidity, giving the sip a lively yet harmonious character.

Tasting Notes

Champagne Rosé Assemblage Brut - Bonnaire stands out for its finesse and the balance between aromatic elegance and gustatory structure.

Color

In the glass, it shows a brilliant pink color with coppery reflections, traversed by a fine and persistent bubble that offers a perlage of great elegance.

Nose

On the nose, it is delicate and refined, with hints of small red fruits—wild strawberries and raspberries above all—accompanied by floral notes and citrus nuances. With time, light pastry and almond tones emerge, a sign of its aging on the lees.

Palate

On the palate, it reveals a perfect balance between freshness and softness. The texture is creamy but supported by a beautiful acidity that gives rhythm and length. The finish is clean, persistent, with a fruity aftertaste that invites another sip.

Food Pairings for Champagne Rosé Assemblage Brut - Bonnaire

Versatile and refined, this rosé champagne is the ideal companion for any meal. Perfect as an elegant aperitif, it effortlessly pairs with appetizers and main courses.

  • Shellfish and seafood, especially prawns and scampi.
  • Fish carpaccio and sushi, complementing its freshness.
  • Delicate white meats or poultry, such as guinea fowl or quail.
  • Fresh and semi-aged cheeses, for a balanced contrast between creaminess and acidity.

Also excellent with red fruit-based desserts, to conclude the tasting on harmonious notes.

Storage and aging: how to store Champagne Rosé Assemblage Brut - Bonnaire

To best preserve the aromatic characteristics and the vivacity of the bubbles of this Champagne, it is important to follow some simple but fundamental rules:

  • Temperature: keep the bottle between 10°C and 12°C, avoiding sudden temperature changes.
  • Light: store the wine in a dark place, away from direct light.
  • Position: keep the bottle horizontal to keep the cork always moist and ensure optimal sealing.

Champagne Rosé Assemblage Brut - Bonnaire, while perfect to uncork young to enjoy its freshness, can evolve positively in the bottle for several years, developing more complex and rounded nuances.
